In One Bite:
Located within the iconic Atlantis The Palm hotel in Dubai, Ossiano is listed as one of the top five restaurants in the Middle East, and with good reason. Captained by chef Grégoire Berger (until end of 2024), it recently received the three-knives accolade at the international Best Chef awards.
Standout Features
The Atmosphere: An enormous floor-to-ceiling aquarium, home to around 65,000 fish, creates a magical and relaxing environment, enhanced by a soundscape of sea inspired sounds and soft music. Low lights, a marble staircase outlined with blue lines, and a large screen projecting images of star constellations and a lighthouse make you feel completely immersed in the marine theme.
The Concept: The entire experience is inspired by a voyage across the Atlantic ocean. Filled with a sense of adventure and playfulness, the tasting menu is inspired by Berger’s travels and touches several ports. Starting from Spain and arriving as far as Colombia and Puerto Rico via Portugal and Morocco, and then back to Brittany via Brazil, each dish has a tale to tell. The menu itself is designed like a navigational compass and is accompanied by a ‘captain’s journal’ which includes notes on each dish.
The Quality: Berger’s creations blend familiarity and surprise. Each course is vastly different from the other, but all are delightful. A recurring element that links many of them is the successful combination of a sea ingredient with a note of sweetness and a touch of citrus or acidity. Aside from the tantalising tastes, the presentation of the dishes is worthy of note: the arrival of a treasure chest or a message-in-a-bottle course will please even those who are usually less susceptible to the aesthetic aspect of a meal.

- Expression of Spain is a reinterpretation of tapas featuring six outstanding mini creations including beef cecina, mojama tuna, and an illusion olive bursting with pistachio. A dollop of piquillo pepper sorbet at the centre of the plate perfectly marries each of the ingredients.
- A kokotxas stew-inspired dish combines bacalhau and caviar in a black garlic pil pil. Served with bread and two types of butter that are beautifully presented in the shape of a nautical compass, this course surprises with its intense yet balanced flavours as the different notes come together.
- The Nitro Ceviche is also a highlight: consisting of hand-dived scallops, white corn and coconut. It’s a delectable ‘frozen’ version of the popular cold soup, inspired by the city of Cartagena.

Ossiano is the ideal destination if you’re looking for a fine dining restaurant that goes above and beyond expectations. The team provides a memorable experience coupled with a personal touch that emerges through the storytelling and the seamless, friendly service. If you’re partial to themed dinners and love the sea, you will appreciate the commitment that is shown to the creative concept through attention to detail and entertaining extras. While the aquarium alone provides a dreamy experience, the delightful menu manages to shine even brighter than the spectacular setting.
